WHY TAKE AN INTEREST IN SPROUTED AND MALTED GRAINS?

Germination and malting are processes that have been practiced for centuries for the many benefits they provide by modifying the chemistry and composition of the grains.
Here’s an overview of the added value they can bring to your products.

More Taste
Germination develops the grain’s natural aromas, while malting creates new ones. You can even create specific notes by adjusting the process (herbaceous, caramel, toast, cookie dough, pistachio, etc.). Either way, your product will taste better!

BEST TEXTURE
As the soluble fiber content is slightly increased, they can add softness to products, depending on the recipe.

Best COLOR
As some of the complex carbohydrates are converted into simple carbohydrates (maltose), the coloring during cooking is a little faster and naturally improved.

More NUTRITIOUS and DIGESTIBLE
Germination partially breaks down carbohydrates and proteins, making food easier to digest. It also increases the content of certain vitamins in the food (e.g. B vitamins), and makes all nutrients easier for the body to absorb.

More FRESHNESS
Sprouted and malted grains tend to retain more moisture, which improves the perception of freshness in the mouth. That said, we can easily control the moisture content of the grains to achieve the desired effect.

optimized PRODUCTION
Because they contain more simple sugars and enzymes, the use of sprouted and malted grains reduces fermentation time and improves pasta thrust. We can also inactivate these enzymes if required.
